Mmm Monday: Chicken with Lemon & Capers

This was last Tuesday's dinner, and I loved it so much that I cannot resist sharing. I got this from the August 1st issue of All You, and it is just utterly delish!

4 boneless, skinless chicken breast halves
Salt & Pepper
1/3 cup all-purpose flour
3 tbsp. unsalted butter
3 tbsp. vegetable oil
¼ cup lemon juice
½ cup white wine
¼ cup capers, rinsed
  1. Preheat oven to 200ยบF. Sprinkle chicken with salt & pepper and dredge in flour. Warm 2 tbsp butter & 3 tbsp oil in skillet over medium-high heat until butter foams. Cook chicken until firm and browned. Transfer to a platter and cover loosely with foil. Place in oven.
  2. Add lemon juice and wine to skillet, bringing to a boil. Cook until thickened.
  3. Remove from heat, stir in capers and remaining 1 tbsp butter. Cook until butter melts.
  4. Season with salt and pepper. Pour sauce over chicken.
  5. ENJOY!
This was the most delish dish of the week. I was absolutely in love with the much so that I'll probably use the same sauce if I cook salmon or something else. The chicken was good, but nothing special.

I've decided for Mmm Monday every week, I will share my favorite recipe from the week before. I have a feeling that this week it will be the S'mores Ice Cream Sandwiches...
